HI - My name is Catherine and my husband (Alan) and I have been long time students - the Tuesday night women's swim class is interested in organizing a meal delivery "present" for Beth and Matt so cooking won't be on the list of things they have to worry about for awhile. We want to see if people want to come to my home on 11/9 for a Cook-for-Bethapolloza. Can you check in on her fav dishes? We have been described as "nutritional foodies" so we also want to focus on healthy, healing foods. Alan and I have a deep freezer so once we have the yummies prepared, we can label and freeze making identification and preparation easy. ReplyDeleteCatherine, I asked Beth last night about foods she would like and she said "green lentils, Italian lentils, not too much curry, you know, plain, just with potatoes, carrots, onions, oh, and beans and rice, yum, mmmm, mmmm, and also..." and then she drifted off. So that was as far as we got. I know she loves stews, beef with peppers and brown rice, baked polenta with marinara, and anything with the aforementioned lentils. Hope that helps!
